Mary's Oatmeal Bread
3 packs yeast
3/4 cup water
2 ¼ cups boiling water
1 ½ cups rolled oats
3/4 cup dark molasses
6 T shortening
1 T salt
6 ¼ - 8 cups sifted flour
3 eggs, beaten

Soften yeast in 3/4 cup warm water. In large bowl, combine 2 ¼ cups boiling water, oats, molasses, shortening, and salt. Cool to lukewarm after mixing. Then stir in 2 cups of flour. Add eggs. Beat well. stir in softened yeast. Beat well. Add remaining flour to make a soft dough that is a bit sticky. Grease the top lightly and cover tightly.

Refrigerate from 2 hours to overnight. Then turn dough onto a well-floured surface and knead just enough to shape 3 loaves. Place in greased 8 ½ x 4 ½ x 2 ½ inch loaf pans, dough touching the ends. Cover and let rise until dough has doubled. Two hours minimum is likely for this process.

Heat oven to 375 then place loaves in without pans touching. Bake 40 - 50 minutes. Remove bread from pans and let cool on a rack. Wrap for storage once bread has entirely cooled.


Baked Blueberry Strata



With the August air comes blueberry season in Alaska. Blueberries can make just about any recipe tastier, and this breakfast dish is no different.

The night before serving, prepare, wrap, and refrigerate the basic dish.  


1/4 - 1/2 loaf of French bread, cut in small blocks or cubes

2 T flaxseed flour
1/3 cup blueberries
2/3 of an 8 ounce package of cream cheese (we use fat free)
1/4 cup - 1/3 cup brown sugar
3 eggs
1.5 T maple syrup
1/2 cup soy milk
1/4 teas. cinnamon

Coat dish with cooking spray, then place half of the bread in the dish.  Add flaxseed flour and blueberries, then distribute cubes bits of the cream cheese.  Sprinkle with brown sugar.  Add remainder of the bread.


In a separate bowl, combine eggs, maple sugar, soy milk, and cinnamon, whisking to blend.  Pour evenly over the bread.  Wrap the dish and chill overnight.


Preheat oven to 350 degrees (325 in convection oven).  Cover strata with foil and bake 30 minutes, then uncover and bake another 30 minutes (1 hour in total).


While strata is baking, prepare the syrup.


1/3 cup granulated sugar

2 teas. cornstarch
1/3 cup cool water
1/3 cup blueberries
2 teas. butter

In saucepan, stir sugar, cornstarch and water, then boil on high.  After 5 minutes at a boil, add the berries and cook for 10 minutes.  Once cooked, add the butter, then transfer to a small pitcher for serving.


Served at Jarvi Homestay with a variety of teas and fresh coffee.  Makes 4 - 6 servings.
